The original 167-episode series adapts the manga faithfully (with some filler) up to volume 36, then stops because the manga was unfinished. "The Final Act" (2009-2010) adapts the remaining volumes to the true ending, so between the two the anime covers the entire manga.
The original 2000-2004 anime ends around chapter 343 (volume 36). To finish the story, either watch "InuYasha: The Final Act" (which adapts chapters 344-558, the manga's conclusion) or read the manga from chapter 344. The manga is complete at 558 chapters (56 volumes). After that, the sequel series Yashahime: Princess Half-Demon follows the next generation.
